Most recent experiment was a Mongolian chicken appetiser on a toasted healie, the way it absorbed the soya sas but retained a crunch factor due to a few chilli's ananinginortwa was sublime and therfore scores a worthy 8/10 on the thrapple tester. Moving on from the Mongolian I'm looking for inspiration for my next toastie, what's your taste bud?

Love cheese and ham toesties but occasionally partial to a Tuna Mayo toastie. Nothing fancy but hey.

Just had aromatic Singapore chicken spring rolls, or something like that, with chilli dip.

They actually sell chilli/mince, cheese and onion toasties in the Stobie Bar, very good i admit, had stovies on toast and a roll, not quite as tasty but very filling and a good breakfast for a Scottish Cup away trip.
McIntosh Haggis, Neeps & Taties equally good on toast or a buttered roll.
Had potted haugh/pottit heid (depending where you come fae) from Mathew the butcher at the top of Caird Avenue on toast last week this develops a wonderful aroma when returned to the grill for melting and for some reason the dug seems to just shiver rather than slaver when im eating this famous Scotch delicacy!
(A poor imitation of this can be bought in a jar of Princess or Shipmans paste)
Slightly o/t but the famous stovie pehs mentioned in other threads can be sourced at: Grants Award Winning Butchers 185-187 Blackness Rd, Dundee DD15PH, Tel. 01382 669556

Not quite the same as cheese on toast but one desires a mixed kebab with cheese in a rolled up naan bread for tea tonight. Any other mouth watering alternatives before the local takawa opens
